Mom’s Quiche

Mom used to make quiche for Christmas and Easter. It was nothing fancy, but I always enjoyed it. Fast forward to her dying in the hospital last July. A number of work friends came by to visit her, and one of them told me that Mom had shared her quiche recipe with her co-workers years ago. Mom had gotten the recipe from a client she had worked with in her adult education career counseling job.

Then her co-worker told me that she had found Mom’s quiche recipe in a drawer that morning. She promised to share it with me, and I thanked her. Well, she did one better and wrote out the recipe and handed out copies at Mom’s celebration of life. It was so sweet!

I finally ended up making the recipe the other day. It’s really easy, which is probably why Mom loved it. It’s why I love it. Allen and I like asparagus, so that’s what I used for the inaugural version. It was good! A bit on the bland side, but I probably didn’t use enough salt and pepper. We’re going to try a broccoli quiche next.

Mom didn’t love cooking and nor do I. But I have a few of her family recipes floating around. I’m glad to have one more to add to the collection.
