I’ve been trying to cut back on dairy and gluten “to be healthier.” I don’t have a lot of GI problems at the moment, but I always have a lot of inflammation in my body and fatigue.
I’m not a big milk drinker, but I do use it in coffee and tea. I also went through a smoothie phase and started using almond milk during that time. I never quite got used to the taste of almond milk in my coffee and tea, though. So I’ve started branching out. I saw pistachio milk in the grocery store a few weeks ago and decided to try that. I really liked it. I found that it had a milder flavor than almond milk. I’ve also been loving oat milk and have bought that repeatedly. So when I saw a recipe for oat milk in an email from Kripalu, I decided to try it. It looked easy and only had four ingredients!
All you need to do is soak some steel-cut oats in warm water, then blend them with water, a little salt, and a bit of sweetener if you like. I have been putting cinnamon in my batches. My milk has been a tad watery, so I have some tweaking to do. But overall, it’s been fine for my coffee and tea. The next thing I want to try is cashew cheese because some friends have been raving about that lately. What’s your favorite nut milk?
